How to create a network drive and/or block of data separate from a NAS or other VM serer?

Hello all,

I am wanting to create a NAS virtual machine but was wondering if there was a way to create the NAS OS VM separate from the data storage.
I would like to have all my saved data in some "unit" or what ever proxmox and what it is built on provides.
Is there a way to install a VM and have that VM point to some other virtual drive that is not encompassed in the VM that is doing the serving of the data?

Thanks for suggestions and your time.
 
Maybe physical disk passthrough is something that could help you?
