How should I start increasing CPU allocation to a VM who's load is reaching over 100% ?

Hi there, I made some minimalist Debian VM's to handle some gateway functions on my Proxmox server and I guess when traffic maxes out, so does the CPU on those VM's.

Luckily, my overall "CPU" summary has never exceeded over 10% so I must have a ton of room on here to allocate more CPU to these VM's -- but I guess I am a bit confused about what approach to take.

Do I increase cores, sockets, or some of this other stuff?

The CPU is an i7 960 @ 3.20ghz and as mentioned, the main Proxmox summary tab always shows ultra low overall CPU usage so I am assuming I have much more to assign if needed

All VM's are currently just set to 1 core 1 socket - I didn't know any better
