How should I migrate my existing server to a Proxmox installation?

Hello everyone, I would like your assistance on what is the best way to migrate my existing server to a proxmox installation
My current setup currently uses two physical servers, one being the backup of the other.

Server 1(main server): i5-9000K, 64GB of RAM with with five disks. One nvme for the OS (openmediavault), three disks merged with mergerfs (data drives) and one disk for parity with snapraid. The data drives I don’t want to format them.

Server 2(backup server): i5-12000k, 32GB of RAM with seven disks. One nvme for OS (openmediavault) , one nvme for programs installation (persistent docker volumes), 5 data drives, four of them which are merged with mergerfs. The data drives for this server contain the backup files of server1.

I am thinking of installing proxmox on server2, use the two nvme drives for the OS(zfs) and create a VM with openmediavault on it and Mount the remaining drives on it.
If this operation is successful on server2, I will install proxmox on server1.

The problem I have is that I don’t know how I can mount the existing drives on proxmox without formatting them, because it will take a lot of time to transfer again all the data from server1 to server2.

What do you think of my approach above?
Furthermore, Is there a guide on how to mount existing drives in proxmox without formatting them?
 

Thank you for the provided link. I found really helpful the way to passthrough physical disks to VM.

However, with this way I have a question about the backup procedure. If my understanding is correct, the backup utility in Proxmox is only for the VMs and not the drives, correct? If that is true, how will I be able to backup the data drives from my server1 to server2, assuming that both servers are using Proxmox?

My final goal are:

1) for the OS: server1 to run OMV inside Proxmox, server2 to run Proxmox and cluster them, so if server1 goes down, the other server can resume operations. For this reason, server2 has a second NVME drive which I am planning on using as a shared storage for both servers. (I will have a lower spec third server to add and then have a HA cluster). The OS will reside on NVME drives

2) for the data drives: the data residing on the HDD drives on server1 should backup on the HDD drives on server2.

So, my actual concerns is how can I achieve point no2 using Proxmox. Is it possible?
