How do I add an extra NIC

I have a proxmox node created in vmware, but no matter what do I ca't add another eth NIC. How do I add another NIC?

That's actually a VMWare question, not a proxmox one, if you mean what I think you do. Since the PVE node is virtual, you need to tell VMWare to supply an additional virtual NIC.
