How can I edit users roles configuration

I am trying to modify the default roles of users. How am I able to do this? Do I have to create whole new roles?

Also is there a way for me to limit which parts of this menu users can see? For example I do not want users to even see "Replication"

built-in roles are not modifiable, but you can define your own ones. some parts of the menu will be hidden depending on permissions (this is currently based on a coarse-grained view, so not everything that the user sees is actually something they can do).
