Homeserver Raid setup

Hello everyone,
I would like to switch from openmediavault to Proxmox for a privately used home server. I have given some thought to modifications to the hardware as well as the configuration. I would be interested in your opinions on this.

Requirements
-Data storage for family
-Docker container (wikijs, homeassistant)
-Virtual machines (Win 11, rarely used)

Current setup
Mainboard: Supermicro X11SSL-F
CPU: Intel Pentium G4600T
LAN: 10 Gbit/s Fiber (Intel 82599ES 10-Gigabit SFI/SFP+)
RAM: 2x 4 GB DDR4 ECC (KVR24E17S8/4)
SSD OS: 1x 32GB Transcend SSD370
HDD Files: 3x WD Red 4TB WD40EFRX

Planned hardware extensions
RAM: +2x 4GB -> 16 GB total
NVME OS + VMs: 2x WD Red SN700 NVME as ZFS mirror via PCIe x8 adapter
HDD files: 3x WD Red 4TB WD40EFRX (as before) as RaidZ5

I am particularly unsure about the NVME configuration. It might also make sense to use one NVME for the OS and one for the VMs. The primary “load” probably comes from Homeassistant. I'm also unsure regarding the NVME size and type. Does it make sense to use a SLC or MLC instead of an TLC for the use as homeserver?

I am also thinking about whether it makes sense to continue using openmediavault as a VM. I currently use few Plusings (USB backup and Portainer CE)

What do you think? I am looking forward to your feedback.

I just orderd the following extensions:

RAM: +2x 8GB Kingston KSM32ES8/8HD -> 24 GB total
NVME OS + VMs: 2x 1TB WD Red SN700 NVME (WDS100T1R0C-68BDK0) as ZFS mirror
ICY BOX NVMe M.2 SSD zu PCIe 4.0 X4 IB-PCI208-HS

Does it make sense and is it possible to use the NVMe also as write cache for the HDDs?
