Hi, I am buying a new PC, Ryzen 7, 64gb ram and a 2tb disk.
Main usage will be hobby development work, playing around with docker containers, and having a few VM's to test with Windows and different Linux distros.
I was planning to install Linux and Virtualbox as a base system, and use Vagrant to manage the virtual machines.
Until I discovered Proxmox a few days ago. Would it be a better idea to use that?

I am reading some other posts in this forum. Would it be better to add a small disk for the OS?
And, if I'm right, I would need another machine as a workstation to access the Proxmox website to manage the vm's and the containers and all.

Or would Proxmox be just overkill, and should I stick to my original plan?

Yes. Much better if you can use a mirror if you can (2 x hdd, raid1)

Yes.

If you will overkill Proxmox, be sure that you will also overkill any other virtualisation platform.

Good luck / Bafta!

Why would I add a mirror disk? It won't be a production system, just my home hobby development system.
Maybe overkill isn't the right word. My question is if Ubuntu/Virtualbox wouldn't be just a better option for a home hobby system. At the other hand, playing around with Proxmox will be fun and I will learn a lot :)

You can install Debian Buster with GUI and install Proxmox VE on top of it or you can install Proxmox VE from ISO installer and install a desktop environment like Gnome on top of it. This way, you can access the web interface with just https://localhost:8006

playing around with docker containers
When using Proxmox VE it is recommended to install Docker inside a VM.

For the moment you can install Proxmox VE itself into a virtual machine (nested virtualization) on your current computer to see if you like it.
