Help with storage config

Hey everyone! Let me preface by sorry if this is a massive noob question.

I recently got proxmox up and running on my r720xd but had a couple of questions. It's installed on a ~600gb ssd that acts as os/basic storage/iso/ vm storage and all that jazz. Then I have a hardware raid 6 with 19tb of space. My question is how would I get it setup so that I can have all of my media on the raid drive? Or would I have to just make the container HDD MASSIVE so that there's enough space to hold all the data? So far I have a windows VM to mess around with and i'm working on getting a container setup for Plex. So how would I need to configure the raid pool best? LVM or Directory? Or something else that i'm missing? And from there, what is the best way to get it passthrough to the plex container or would that even be the way to go? This is my first go at this and at quite a loss. I'm coming from a Server 2016 setup where I could just have plex installed and run the media off the raid pool. Any help would be more than appreciated!

Ideally i'd like to get it setup with a Windows VM (already have) Plex container (already have but have no clue how to configure my storage best) and then i'm going to be getting into virtualization of pfsense among other things! But as of now just figuring out how to config the storage is my biggest block.

first of all, it's really hard to understand what exactly you plan on doing.

But let me help you with basics that can maybe solve it.
I had something similar installed called Emby. It's basically a plex alternative.
You could add "media directorys" there for series, movies, music and so on.

So i just set up a debian 10 VM, configured it with 50GB of my SSD Pool and 8TB of my HDD Pool.
During setup i configured the os to be installed on the SSD and to mount the HDD Storage in /mnt/hdd.

During the setup of emby, i configured it to search in, for example, /mnt/hdd/series for series.
That way media was stored on HDD and the OS was on SSD.

I think that's what you want to do, right? But with plex and a Container?
