"* how exactly are you rebooting the VM?"
im using the built in reboot option on unraid

"can you access the VM again if you force a stop/start? qm stop 101 && qm start 101"

i haven't tried this yet but i have tried to stop it with the gui button

sometimes i can get it to see the usb drive and then it will hang on the boot

and i end up having to remove the hardware (usb drive) virtually and physically

sometimes proxmox refuses to see the usb as well

are you pressing "Stop" or "Shutdown"? (these two do different things, "Stop" is more akin to pulling the plug)

why is it necessary to boot the VM from a USB stick?

it either gets to the boot screen and hangs or it goes boot device not found
that probably has to do with the USB boot disk not being recognized for some reason, it could be that the USB device is deactivated by unraid when you shutdown the VM.

my first suggestion would be to boot the VM from a virtual disk instead of the USB stick and see if that helps.

you could also try doing USB port passthrough instead of a specific device.

FIrstly i pressed shutdown

secondly
because that is the only way to have unraid running

I really dont think its the usb as once proxmox finally allows it to boot properly it works just fine and has no errors
