Note that this does NOT give you any redundancy. Neither with LVM not with ZFS.
ZFS has self-healing features which requires some redundancy to be present. The usual way is to create mirrors - and for specific tasks contructs called RaidZ.
Redundancy is not a requirement for ZFS in itself. But is is recommended ;-)
