GRUB will not boot after installing new disks

So I have 1 NVMe 1TB drive with Proxmox, all worked flawlessly until today. I shut down the system and added 2 x 4TB SATA Hard Drives to the system, after booting I got the message:

error: disk 'lvmid/<UUD>/<UUID>' not found
grub rescue>

Even removing the drives makes no difference. I am on the latest Proxmox version 7.3

Any idea why this would have happened?
 
I tried booting up the Rescue Boot option of the Proxmox install media...but I get:

Code:
error: no such device: rpool
ERROR: unable to find boot disk automatically
