GPU Passthrough, temperature, lm-sensor, Coolercontrol

Hi,
I try to explain my situation: I have a server proxmox with GPU passthrough (windows gaming) the work perfectly; gpu and cpu are liquid cooled.
To control and set fan and pump I use coolercontrol that have a web gui, so i can check temperature and fan also by windows, but i don't see gpu temperature on host and VM by coolercontrol and lm-sensor
Now the problem: if I install gpu drivers( tuf 4080 Super) on host by ".run" file i can see temperature, but VM don't start; if uninstall drivers VM start again.
Is there a solution to have a GPU passthrough and see temperature of GPU?

I add that I didn't nothing about IOMMU because, as I read, my mainboard (MSI z690 unify) have already IOMMU enabled.
