Do I need a 2nd GPU for Proxmox Host itself to function?

No, but it makes it easier when you can get your system to boot with the GPU you don't passthrough. Make sure the GPU you do want to passthrough supports passthrough by searching the forum.

@leesteken I already have passthrough mostly working. I want to block i915 drivers from being installed.
