Best you get some old computer to play with and test stuff yourself. PVE will run on nearly any x86 machine.

in addition, run nested PVEs. You only need one computer for that.
With two networked nodes, is it possible to configure a cluster with proxmox using ethernet as the communication infrastructure?
You can only use ethernet for communication. If we're talking about non-virtualized cluster, you need a 3rd quorum device in order to have a proper working cluster. If we're talking about a virtualized cluster, it does not matter and you can have all of them on one node.
