Does pve need/require super fast storage for the host itself. This assumes that the VMs all run off other storage than the boot system. Or, saying it in extreme ways, could proxmox run off of a thumb drive without slowing vms?
Not at all. I've run PVE on a 15 year old PC with a SATA. It wasn't that bad really and I am sure it would've been better with a SSD. The whole thing ran on this SATA not just the install.

I think that answers my question. My plan is to boot pve on some 2.5" sata drives in zfs raid1. All other storage will be fast with cache devices. I just didn't want HD boot drives to effect performance of VMs.
