By default it seems that Proxmox mounts NFS shares as NFS v3 and the only way to change this to NFS v4, v4.1 etc is to manually edit the /etc/pve/storage.cfg (options vers=<NFS VERSION>) on the host.
Maybe this may be better if there was a simple drop down to select from in the GUI for the NFS version to be used?
