EFI stub: loaded initrd from linux_efi_initrd_media_GUID device path

I added another SATA SSD drive to my host and extended my one ZFS storage pool it worked great but after rebooting my host I get stuck at EFI stub: loaded initrd from linux_efi_initrd_media_GUID device path.

I've created a bootable USB drive with the Proxmox 8 ISO image on it and can boot from it on the host but when I choose terminal or GUI debug mode I get dropped at a # prompt with seemingly no tools at my disposal.

I assume my issue is related to the bootloader not being updated but know very little about it and nothing about how to rectify. I've got a bunch of VMs on this host and the ZFS storage in it and would hate to not be able to recover it.

Please point me in the right direction. Thanks very much!
 
When I go to Advanced Options from the menu after booting from the ISO on the USB drive and pick either GUI or Terminal debug install, I end up at a # prompt after watching the boot process from the USB drive.

If I enter a command, like efibootmgr -v, I get an error message saying /bin/sh: efibootmgr: not found

How do I access these tools?
 
Trial and error, typing the return command at the # prompt takes me to a bash shell as root@proxmox with more commands available.
 
lsblk command shows:

loop0 size 103.3M
loop1 size 410.3M
sda Size 1.8T
|-sda1 size 1007K
|-sda2 size 1G
|-sda3 size 1.8T
sdb size 1.8T
|-sdb1 size 19.T
|-sdb9 size 8M
sdc size 14.7G (this is my USB ISO image)

I can mount loop0 and loop1 but attempting to run proxmox-boot-tool refresh results in:

Running hook script 'proxmox-auto-removal'..
Running hook script 'zz-proxmox-boot'..
No /etc/kernel/proxmox-boot-uuids found, skipping ESP sync.
 
Turns out one of the drives in my ZFS pool went bad and I wasn't using RAID so I'll have to start over.
