EFI - Restored Windows10 - can't change processor to HOST

i had a difficult time testing a restore of a Windows computer of mine as a VM.
I had to use IDE, EFI disk, use the right BIOS (ovmf).

But, I can't get it to use HOST CPU, it just won't boot and I was wondering if anyone knew how I can get that working.
 
"just won't boot" means what exactly? Getting stuck at the Windows Logo? OVMF? Black screen? Error in task logs/journalctl on the host? In general, the "host" CPU type should be compatible with any Windows.
