although this thread is a year old, I would like to say that i too have a dell r720 and i am running the latest proxmox (8)
I have been running this server with a truenas scale and a home assistant vm with absolutely no issues (until i screw things up, which i did).
I originally installed proxmox 7 without any problems and later upgraded to 8.
I since fobard my server and i had to reinstall everything. I started with a virgin 720 server and installed directly proxmox 8 with no issues
