Does updating Proxmox affect on VMs?

In theory, no. The upgrade doesn't do anything inside your VM's.

It does require a reboot though, due to the new kernel. And it will install a new version of qemu/kvm, with possibly new or different bugs. It seems most people are having no issues (my upgrade went smoothly for example), but look around the forum for the issues people have had and decide if they impact your particular setup.
