We are planning to buy Dell PowerEdge C6525, with 2 x AMD Proc, 1 x Mellanox ConnectX-5 EX Dual Port 40/100 GE QSFP28 and 2 x 480 GB M.2 SSD (RAID-1).

Where can I find documents or links, stating that the configuration (Processor, Memory, Mellanox ConnectX-5 and SSD) above can run well on Proxmox VE?

Proxmox uses an Ubuntu Kernel. You can checkout the HCL from Ubuntu, Proxmox VE should run where Ubuntu can run.

Proxmox works with anything you throw at it.

Whether it runs well depends on the workload.
