Is there a way to stop a task via CLI (SSH) similar to the GUI?

yes, with
Code:
proxmox-backup-manager task stop <UPID>
(the upid is the unique identifier for the task)

for pve you have to use 'pvesh':

pvesh delete /nodes/NODENAME/tasks/UPID
