Ceph - 2 OSDs and three nodes in total - possible scenario?

Hello dear forum.

Question arose:
Following situation for PVE-Cluster with Ceph on 3 nodes:
- Two of them are planned for "Doing the job", i.e. virtualizing, and keeping all of OSDs for Ceph, means also having enough ressources for this
- Third one is planned as "diskless"monitor (Quorum)

Will that function? (Yes, the recommended setup is known to us)
(Sorry if not enough details - just please point out which would be appropriate here)
