Can PVE be updated safely while VMs are running?

Goodmorning,

we would like to ask some questions about PVE upgrades:
- Is it possible to "dist-upgrade" the PVE safely while VMs are running?
- If a new kernel is installed in the process, do we need to reboot or could keep using safely the old one until the reboot enable the new one?

This would allow us to better schedule the downtime of the clients.

You can continue using the system in steady state. I.e. everything that is already working will continue working. However, if tools or hypervisor binaries changed, then if you try to change the configuration or sometimes even query it - it may result in error.
You can stay on old kernel as long as you like generally, however to avoid surprises I'd advise to live migrate VMs elsewhere for Qemu upgrade and then back. That ensures that VM is started with correct binary.
