Previously on my old network I had a proxmox server I had been using a little.. I have since made the switch to a unifi express and uinfi-24 switch to get practice with vlans and such. I got it up and going and have now decided to change my old proxmox server to a proxmox backup server and then add a new proxmox ve server. I have done the initial setup on both proxmox servers, but I cant see them in my unifi network nor can I reach them by going to their IP in a browser, or even ping them. So any ideas what I may have setup wrong?
Can not reach PM servers after new install.

As always with connection issues (around twice a week): what is the output of
ip a and cat /etc/network/interfaces? A readable photograph of the Proxmox host console will do.
Is the rest of your local network also in 192.168.100.0/24? What is the IP address, subnet and gateway of the computer you want to use to connect to Proxmox? What is the IP address and DHCP range of your router?
Everything that should connect to PM at all is on the same Vlan 192.168.1.0/24. the main computer I use to connect to PM is
IPv4 Address. . . . . . . . . . . : 192.168.1.11
Subnet Mask . . . . . . . . . . . : 255.255.255.0
Default Gateway . . . . . . . . . : 192.168.1.1
The range for that Vlan is 192.168.1.6 - 192.168.1.254.

The range for that Vlan is 192.168.1.6 - 192.168.1.254.
Your local subnet is 192.168.1.0/24 but you configured your Proxmox as if your local subnet is 192.168.100.0/24. Those two different subnets cannot communicate unless for configure routing from one to the other in your router.
You chose 192.168.100.1 for the gateway on Proxmox but your router is at 192.168.1.1. How is Proxmox supposed to reach the rest of the network (and the internet) if you don't tell it where the router is?
Maybe learn a bit about basic network administation before using Proxmox with lots of virtual machines in a (virtual) network? There is also a sub-forum for network and firewall questions: https://forum.proxmox.com/forums/proxmox-ve-networking-and-firewall.17/
Or just give your Proxmox and IP address between 192.168.1.2 and 192.168.1.5 (as to not overlap with the DHCP range) without causing a duplicate IP address and set the gateway to your router's IP address 192.168.1.1.
