Best way to provide 1TB+ storage to VM: Backups?

I currently host a handful of VMs on TrueNAS SCALE. I'd like to move these to a Proxmox box. A couple of them will need between 1TB-3TB of data. How I do this currently is the boot drive is on a 3-way-mirrored NVME drive array, and I created iSCSI extents on a separate spinning rust array for the VMs that need "bulk" storage.

Is there a better way to do this in Proxmox?

If I do use an NVME boot drive and spinning rust ISCSI bulk storage, how does Proxmox handle automated backups of that?
