Basic Desktop with 2 monitors, 2OS

Hi --

I'd like to set up a Proxmox host on a big desktop with old Intel cpu and old AMD FX R9 280X GPU.
Can I display a Linux VM extended across both monitors on the host?
Can I display a Windows VM extended across both monitors on the host?
Can I display the Linux VM on one monitor and the Windows VM on the other monitor, both on the host?

I assume that I can start on the Proxmox host, start the VMs, and just rdp into the VMs, on separate monitors, but wondering if there was a better if not easier way.

install the VM as you like, connect to the VM using VNC, or nomachine, or anydesk etc, make it full screen on your host.

Can I stretch VNC or an alternative across two monitors?
Would I be getting the benefits of the GPU with this approach?
It seems like the VMs wouldn't be using the GPU, they'd be using an emulated GPU and sending it over the VMC network.

in my case i use nomachine, and nomachine can utilize the GPU for hardware encoding, however it cannot stretch to 2 monitor afaik.

i have an iGPU passthrough to a Linux vm, and two nvidia passthrough to two windows 11, all with nomachine and able to utilize the H264 hardware encoding with the gpu.
