"Backup" in case of SSD failure

Hello,
I got this hardware : https://a.aliexpress.com/_BOMxxw
It's very nice but it's using a cheap M.2 SATA SSD without any DRAM cache and probably multi layer.
I'm running opnSense on top of proxmox, and since my setup is quite complex, I fear this cheap SSD will fail me and I'm looking into backup solutions.
Backup over the network does not look like a good option for me since the opnSense VM is my main router, when the VM is down, all networking is down...
I was thinking about adding a reliable SATA SSD probably like Samsung 860evo since I have a free SATA III port inside this box.

So I'm looking for a simple way to image one of the internal SSD onto the other one on a regular basis (daily)

This way, if a SSD fails I just have to boot from the other one...

Is something like this achievable and is yes can you guide me a little to set it up ?

I'm not so keen in getting mdadm running again, was quite slow and heavy last time I used it, no doubt it has made progress in the last 10 years, but still...
The most appealing option you propose is rsync.

I get that with rsync the idea would be to setup the main disk as a standalone proxmox server with only one drive, then put some big butrfs partition on the second hdd (to make use of dedup for example) and then have some crontab running to copy over the VM backups, images, and the pve environment itself to some directory on this other SSD.

I'd realy like a few pointers as to what needs to be backed up for a pve system, I get that it's mostly like debian, but it'has been quite a long while since I last backed-up a debian as well...
