Current environment:

Prox ver: 7.4-17
Windows Cluster hosting a SMB share and iScsi (iScsi is for VM host only and assigned to a different node on the cluster)

Recently I've had issues backing up my VM's it used to go super fast but all of a sudden its just not backing up properly and not sure 100% why. All the VM's appear to backup fine, transferring data, I can see the data transfer on the windows cluster, but the last step of the prox backup shows -->

Code:
INFO: Backup is sparse: 34.87GiB (11%) total zero data
INFO: transferred 300.00GiB in 3187 seconds (96.4 MiB/s) and just hangs.

I've had a couple of backups running for 3 days. I've tried googling but nothing really comes up.
The Iscsi connection stays active so I dont think that network could be part of the problem?

I have checked the syslog and nothing stands out by any means, I see that the SMB share seems to have went offline for 10seconds, but it is back up. if the SMB share does go offline briefly would that cause a total timeout? is there a way to adjust it? I kind of wander if it has something to do with the Windows Cluster Fileserver VM doing health checks?

Yes, network disruptions, even brief, can affect backup operations.

I would test to set the bandwidth limit in the vzdump.conf file `/etc/vzdump.conf` and test the backup again, check man vzdump
