I have a lot of experience with VMware vSphere's automatic update option.

The process is
  • the host moves all VMs to the other hosts
  • the hosts updates itself
  • reboot if required
  • the host will get the VMs again
This process can be automatically triggered at specific dates and doesn't need manual system administrative interaction.

I am thinking about migrating our vSphere VMs to a new Proxmox environment.

Is there an automatic update process for Proxmox VE as well? If not is it planned?

There is none and I don't know if there is anything like that planned.

Anyway, this can be done without too much hassle in many ways however, I'm not sure if this would be such a good idea.
I already had problems with returning servers (some not returning at all, some others with certs problems following an upgrade, some others with ceph osds not getting back, ....) and thus, in this situation, what would you do if everything is automated ?

In vSphere if there are problems you can almost always roll back. If not the sysadmin has to look at it but I have to say problems are very rare.

I could think of a process where only one host is updates, there are automatic functionality tests and the automation process stops if there are any problems.

It depends on how often problems occur but an automation process could be worth it. If you have a lot of hosts it's always time consuming to watch over the update process.
