Apt upgrade... oops?

So, I have read enough to determine I shouldn't have apt upgraded this entire time...

It looks like I am stuck on 7.1-7 and apt-get dist-upgrade doesn't show anything nor does the GUI. I know enough about debian to be dangerou (obviously), but I have no idea how I would go about fixing this. Thankfully everything seems to work fine, and has for months, but eventually I will need to address this...

Is there a simple fix? Beyond that, is there an actual way to backup PVE? I can't seem to find one, and without being able to backup the VM settings......... this will not be a super fun and exciting weekend once I eventually decide to go this route. I run PBS to backup VM's, but I have never figured out how to actually backup PVE's settings. Assuming there is a way to backup PVE's settings and VM's, I could easily just reformat, but again, I have looked and have not figured out how I would go about this.

Any help would be great!
