Air gapped disks

Hello hopefully this is an easy one. I have a PBE server set up and so far so good. However in addition to the backups on my server I want to create an air gapped disk to hold backups. The reason being is I plan on taking the disk off site in case of fire etc. What I was planning on was simply just mounting a USB HDD then simply copying the backup files to it. But I am not sure of two things. First what files exactly need to be copied over and if I ever have to how do I import these backups to a new Proxmox server.

simplest way is to copy the whole content of a datastore onto a usb drive (including hidden files starting with '.', e.g. '.chunks' ) and for import you copy the data back into a datastore
the plan is that we have some kind of import/export datastore feature in the future, but no concrete plans yet

also sometime this year we will add tape support so that you could copy a datastore to tapes for offsite storage
