Advice on Proxmox VM's setup

Hi everyone!

So, after 8 months, I finally have all the hardware for my "new" server. Although I have spent the last few months playing with Proxmox, this will be my first "production" Proxmox server, so I want to try to get it right the first time. Here's what I am working with:

Asus Z9PR-D12 w/ 2 x's Xeon E5-2640
ASUS PIKE 2008 RAID controller - IT mode
64gb DDR3 ECC
2 Intel SC3700 200gb - OS
1 Intel SC3700 400gb - SLOG
2 Seagate 8TB SAS - Data

I'm planning the following VM's:

1 - SAMBA server
2 - Windows 10 with GPU and USB passthroughs
3 - OS X with GPU and USB passthroughs
4 - Nextcloud server

I want the VM's to be able to access the SAMBA server, which is where my main data storage will be. I'm planning about 6TB for the SAMBA server and the rest of the storage space for my VM's.

Does anyone have any suggestion on the best way to setup this type of configuration?

What exactly is your concern? Set up the VMs as described and install the wanted services.
Keep in mind though that a 6TB virtual disk has to be processed if you want to backup it to another location, for example.
Maybe setting up an NFS share on the host that the Samba server can mount and share is a bit easier to handle. The same goes for Nextcloud, however the Samba shares could also be used in here.
