Is there some sort of authentication step I am meant to take...somehow?

At the moment, clicking on the node, then on "synology-nas" (the name of my NFS storage) just brings up a message:

"mount error: mount.nfs: access denied by server while mounting 192.168.1.20:/volume1/Proxmox (500)"

Presume I need to enter the password somewhere, but had assumed that would have been dealt with automatically?

Oh never mind, I forgot to add the permission for the new IP address to the Synology NAS.

Schoolboy error!
