"A-la" pfSense boot environments

I wonder if PVE and PBS have the option to save a then restore the boot environment.

Similar to pfSense, when the entire configuration can be saved and then during boot time restored in case something went wrong with for example upgrade?

No but ZFS has snapshot functionality. There was a thread about using this to restore PVE in case updates went wrong some time ago.
