Is there any any to do any type of customization on the summary page for the node(s)? It would be awesome to add things like disk statistics/usage, lm_sensor data, ipmi data, etc.

Nope you cant modify or change the data shown there. Best thing would maybe be external metric server with influxdb + grafana for all your needs. https://pve.proxmox.com/wiki/External_Metric_Server

You could open a feature request on bugzilla with details what could be shown additionally that is easily adoptable for typical hardware.
