Oh, I did not notice it's so old... Generally Debian/Proxmox kernels are rock solid, but yeah, there is potential to go wrong... I wouldn't cry. I bet it's something easy. Just find out what folder has grown up and solution should be obvious. Downgrade kernel, delete junk and you should be fine...
Considering it was filled up within a couple of hours - you should not enlarge it. You should find the reason and resolve it. (Backups? Temp folder?)
Start with sudo du -hxs /* and go deeper then.
But after the disaster you will have to download back the whole datastore before you begin with recovery. If you had another PBS server remotely, then you could (1) begin immediately and (2) download only what you need.
With such a big datastore (at least relatively to bandwidth) - any rsync/rclone/borg method seems useless. Most likely you will never get consistent backup (remember the datastore changes all the time). The consistent copy should be "atomic", for example from a snapshot of original datastore...

In your case I think the answer is simple: 2x512GB/nvme - zfs mirror (for root fs and essential CT/VM files); 2x8TB - zfs mirror (for data).
