we are using 6 servers in production environment without any issues.
I have tested it with more than 20 servers (Supermicro) just for the test, before switching to proxmox (I was using OpenVZ on CentOS) and it worked very well, but the setup was with 20 Main servers in cluster with only one VPS...

1. How can I mount one VPS into another. What I mean:
I will always have recovery VPS (with almost read only permissions)
When someone crash his VPS, but want to fix the problem instead of reinstaling I can give him access to this VPS and mount...
but how your script will connect to remote machine when it will try on 22 port and will get connection refused?
Really, i didnt tested it, but thats what I think
the problem here is not with how to change SSH port, but with making PVE Cluster to work with non-22 port for SSHD.
If you have PVE cluster (with more than 2 servers :P ) it wont work, because pve is searching for SSH on standart port.
