When I look in the openvswitch-dirs on the affected server I find similar files like Udo listed above.

I don't know. This is what I did step for step:
1. I disabled the openvswitch settings in the /etc/network/interfaces file and reverted to default proxmox setup.
2. Then I restarted the server. Server had still no contact with the network. Only the "lo" showed up in the ifconfig command.

This explains why my Proxmox VE 4 node lost contact with the network after the upgrade. After finishing the upgrade on the console
I rebooted the server. But still the openvswitch ports are gone.
Was about to ask the same question myself. I have not upgraded to Proxmox 4 because of uncertainty around this issue. Would be nice to know if anybody can help us with this?
I have customers running Proxmox 3.X on HP DL 380 G6 servers. It have worked well now for 5 years.

Yes. I have done this several times. Just add a new network interface in the setup of the virtual machine which is of type virtio, and delete the old one.
I suppose you have to reboot the Debian machine.

The reason was a failing raid 5 storage on a HP server. I solved this replacing the failing disc and reinstalling Proxmox VE on the node. Now it's runs fine.
