I'm sorry I was looking in the wrong place. Above the "part" section there is the "lvm" one.
I can see the LVM partitions there and I can restore a single file:

I've upgraded my Pmox to VE 7.0-11 and Pmox Backup to 2.0.9.
Once I try to restore a single file from the XFS LVM, it downloads me a zip file containing a folder called vda2 with nothing inside o_O
Still get the same problem:
Centos8 VM backup with XFS LV:
proxmox-file-restore failed: Error: mounting 'drive-ide0.img.fidx/part/["2"]' failed: all mounts failed or no supported file system (500)
