I use USB 3 for my Proxmox backups. Support is built in. On average I get 120MB/s using lzo compression. When I rotate backup drives, I just umount the drive and then mount -a once the new drive is connected as I have an fstab entry for the usb drive.

Using clonezilla, you can go directly to proxmox while the server is offline. I think offline is much cleaner as there's a chance that data is changed during the live conversion...
