Sorry to say, but that's kind of stupid question. As one can fuck up security of each product on it's own, it's hard to say. PVE comes secure ootb and you can increase security by adding more layers like specific firewall rules, fail2ban.

We mix some local VMs on RAIDZ1 SSDs with sheepdog clustered VMs (also on top of ZFS datasets). It performs awesome so i did not invest any further time in fine tuning. If you're interested in special numbers, i can test them.

Ansible creates VM via API (proxmoxer) with Kickstart or Preseed options, starts the VM, VM is bootstrapping with Ansible enabled, Ansible configures the VM with apps and everything.
Jip. Better start with test systems, try to break it, then you know what common pitfalls to look after and how to recovery and to prevent. Of cource you're welcome to ask questions here ;)
Well, it does if you want to have all the copy-on-write benefits like snapshots. Sure, it does not add redundancy or extra performance (besides zfs great caching).
I think that i once stumbled upon a list of GUI shortcuts but i can't find it any longer (or my brain is fooling me).
What i'd love is a shortcut to enter the global search field. I'm pretty sure it exists ;)
