I ended up re-trying the pass-through solution from scratch and for some unfathomable reason it worked this time. I don't know what I did wrong before, but everything looks to be working from a Proxmox perspective now. Thank you for your help! :)

Sorry if my explanation was a little fuzzy, but you got it all right! OMV in turn will handle network sharing etc.
