CEPH will always show the available raw space, with a replication of 2 as you add 1GB it will show as 2GB on the used space via CEPH.

Are you monitoring 24/7 in a small cluster with fast disks the scrubs will finish fairly quickly. And once there completed it will just go back to 100% active.
As it says all 160PGS are active and clean and your health is OK.

What storage format is the old server using? I see you have mentioned LVM-thin on the new setup but wasn't able to see the format used on the old system. If your not 100% sure just include an image of the storage tab for one of the old servers.
