ich nutze zfs-auto-snapshots und c4pve-autosnap parallel, c4pve-autosnap für meine VMs und Kontainer und zfs-auto-snapshots für meine Datasets man kommt damit sehr schnell an ältere Daten falls man diese mal benötigen sollte

Then you would also need a way for both OPNsense nodes to get Internet access though otherwise your Internet uplink gets your SPOF. Otherwise you would put both of your sense nodes behind your Internet uplink (e.G. a Fritzbox DSL or fibre router)...

PVE-03 still has the "wrong" network, but that's probably just an oversight. I probably would introduce one more network for the PVE-nodes...

You may need to look deeper into how networks work. If you want to have a setup like the one you explained in the image above, you need to have a router with two interface, one in the FritzBox and one in the subnet.
