Please try using the same locales on host, guest and client. There's quite some guesswork involved in NoVNC and using the same locales for all three parties improves the chances of it making correct guesses.
The user you mount the NFS share as is not allowed to write to either the mountpoint or the share. Assuming you mount as root you may want to look into mounting as a different user, that you give write access on the share. Or configure a mapping on the server.
The PVEAuditor role is intended for that purpose. If you want to limit access to VMs and nodes (excluding storage, pools and access control) you can give the user access to only /vms and /nodes. For example:

If you have the rootfs on lvm-thin you don't need to do anything, except not use the space. With thin provisioning the size is a limit, not a fixed value.
