Maybe the the IO-Wait gets so high that corosync drops out or the Watchdog gets triggered? You could try to set a bandwidth limit in the backup job or a fleecing storage?

For erasure coding with k=8 and m=3 you need at least 12 nodes.

I think you're asking the wrong question. what is the workload in vm count and minimum required iops/vm? how much capacity do you need? ceph works fine with hard drives. its just slow.

don't use consumer ssd with ceph or zfs. you need PLP to handle sync write
