    This feels like a hardware issue.. or maybe the software watchdog kicking in, but you'd have logs.. what does dmesg(or dmesg -Tw) say? What's the status on RAM when the backup happen?

    Your actual problem is systemd going to rescue.. plymouth shouldn't be installed on proxmox, I think, maybe it came with a dependency from someone installed.. What state is your proxmox install? does it drop to a root shell? Can you try to boot...

    Boot-related things changes between 5 and 6 or 6 and 7, I can't remember the details. You'll have to follow the upgrade guides from 5 to 6, 6 to 7, 7 to 8 and 8 to 9, making some manual changes each time. If might be much easier to backup...
