When looking at the S.M.A.R.T Values i dont see any problems, also all other VMs work fine. The VMs are working properly only the backup is failing: Is this really the case here?

It is happening for all Ubuntu VMs that do not have GUI rights so far, we have no other setups on this without GUI. We have a KaliLinux that works with GUI without problems on this same node. Yes if those are rebooted we see the proxmox logo, although nothing else after that.
