In a non-production server, I upgraded to the 6.1 kernel. Seems ok so far, but I did notice something interesting in the Netdata stats, suggesting that the processes are waiting a bit longer for CPU resources now. Perhaps the future pve-firmware will improve this? Regardless, I'll leave it as-is.
No comments? I would also like to build a server around the 5700G, with a Jellyfin VM running Ubuntu and able to transcode using the iGPU from the 5700G.
I've tried hard to avoid posting this question, and have searched the forum, read the documentation and hunted through YouTube videos, without success. I am sure i am overlooking something simple, but I give up after weeks of searching.

Telperion, thanks a bunch ... this worked for me and saved me some time. I added the following 2 lines from your example to my nginx config:
proxy_set_header Upgrade $http_upgrade;
proxy_set_header Connection "upgrade";
